Join us for Conservative Taste: Gong Bao Ji Ding with Anh Vo, a donation-based event to support the Black Artists Space to Create Residency program of New Dance Alliance! We will cook together and gather afterwards to eat and talk.
“I often joke that my cooking has become Pan-Asian ever since the pandemic broke out. In just one year, I have learned so many new recipes and cooked a lot of elaborate dishes; and yet, they often don’t veer too far away from my Vietnamese taste. I still yearn for the (South) East Asian umami flavor—the harmony between the saltiness of fish sauce/soy sauce, the spiciness of chilies, the sourness of vinegar, and the sweetness of sugar. Even when I try cooking Western cuisine, the only thing that draws me in is “Italian food,” which just means pasta to me, perhaps because of its resemblance to Asian noodle dishes.
Unfortunately, politics has given the word conservative a bad rap; there is nothing inherently negative or positive about being resistant to change. My conservative tendencies when it comes to cooking serve as micro-reminders that I can not, nor should I, assimilate into the USAmerican society. For this event, I want to share a Chinese dish that I love though never cook before: Gong Bao Ji Ding, or Kung Pao Chicken. The recipe is extrapolated from Seonkyoung Longest’s Asian At Home Youtube series. None of the ingredients can truly be substituted, but we will experiment and improvise together.”
